A takeout favorite turned homemade classic! Full of tender chicken, crunchy veggies and saucy noodles. Quick weeknight dinner and way healthier than the restaurant version. Customize with your favorite veggies. Let’s go!
In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and 1/2 tablespoon of sesame oil. Toss the chicken slices in the marinade and let them sit for at least 15 minutes. This adds incredible flavor to the chicken.
While the chicken marinates, cook your Lo Mein noodles according to the package directions. Drain and set them aside, tossing with a little sesame oil to keep them from sticking together.
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and grated ginger, stir-frying until fragrant (about 30 seconds). Then, toss in the bell peppers, carrots, bok choy, and any other veggies you’re using. Stir-fry for about 3 minutes, just until the veggies are tender but still crisp. Remove from the wok and set aside.
Using the same wok, heat the remaining tablespoon of vegetable oil. Add the marinated chicken slices and stir-fry for about 5-6 minutes, or until fully cooked through and golden brown.
Add the cooked vegetables back to the wok with the chicken. Pour in the remaining soy sauce, oyster sauce, hoisin sauce, and cornstarch slurry. Toss everything together and cook for 2 minutes, allowing the sauce to thicken and coat all the ingredients.
Now, toss the cooked Lo Mein noodles into the wok and mix everything together until the noodles are well coated in that delicious sauce. Sprinkle the green onions and bean sprouts on top for a fresh crunch.
Your Chicken Lo Mein is ready! Serve it hot, and watch everyone come running to the table.
Customize it! Feel free to add or swap out veggies. Broccoli, snow peas, and mushrooms are great options
